Okay, the Matrix lobby scene with the security guards? That's not a fight. That's a ballet of bullets and broken glass. (Also, it had no emotional resonance, because what was carrying the emotional weight of the story at that point was Morpheus, who wasn't even in the scene.
Obi Wan in the cantina? Yeah, cool fight, but wasn't it over in two seconds?
There's a serious lack of Jackie Chan in your list. Most of his movies have astonishing fight scenes, but the ones in Drunken Master are over the top.
Also Godzilla is missing from your list. Not that his opponents were worthy.
There aren't very many Westerns in your list. I'd add the final scene from High Noon, since the entire movie builds up to that one shootout.
There also aren't any boxing movies on your list. I don't particularly like boxing movies, but those fight scenes are always about the emotional impact, not about flashy choreography.
But for emotional impact, I have to say nothing tops seeing My Bodyguard when I was 13 years old-- the main character, not much older than me, hires Adam Baldwin to protect him from Matt Dillon, but in the end has to fight him on his own.
